Mini Lemon Delights

Well it looks as though Summer has finally arrived here on the East Coast! In celebration of Mother Nature blessing us with some sunshine I grabbed some lemons and dug into my creative center to come up with a new fun recipe.

I used a no sugar added vanilla pudding to give these some texture and to keep the calories lower…from a yield of 10 muffins, each comes in at only 88 calories! I was pleasantly surprised when I cut one in half to find it soft and chewy in the middle…just the way they should be!

Mini Lemon Delights

Personally, I’m not a huge fan of lemon flavor or scent, but in the Summer I start to crave citrus for some reason. These mini muffins have just enough tang to them without tasting overly sour. Grab an iced tea and enjoy a true taste of summer with this recipe!

Mini Lemon Delights

2/3 Cup Oat Flour (100g)

1/3 Cup Almond Flour (45g)

2 TB Coconut Flour (10g)

1/4 Cup Stevia (6g)

1 TB Baking Powder

1/4 Cup Almond Milk

1/3 Cup Vanilla Pudding (100g)

Juice of 2 Lemons (@ 1/4 Cup)

3-4 TB Lemon Rind, Grated

1 tsp Lemon Extract *optional*

1 Egg Beaten


Preheat oven to 350 degrees.

Combine first five ingredients in a medium bowl and mix.

Grate the lemon rinds and set aside.

Squeeze lemon juice into glass measure cup.

In a separate bowl add your egg, pudding, milk, lemon juice and extract.

Mix wet ingredients into dry ingredients, and then add the grated lemon peel.

Divide the batter equally between muffin tins and bake for 12-15 minutes.

Once a toothpick inserted comes out clean, they are done!

Mini Lemon Delights

Let cool and add a dash of icing if you wish!

Macros based on 10 mini muffins and my ingredients:

1 Muffin = 88 Calories, 4g Fat, 10g Carb, 3g Protein
