Peanut Butter Coconut Truffles

Simple snacks are a favorite of mine. I love having something I can take with me while running errands, or to stave of hunger before I have a chance to eat a meal. While I have made a few different energy/protein ball recipes (like this and this) I was eager for something new.

Peanut Butter Coconut Truffles

After hearing great reviews about Earth Balance Coconut and Peanut Spread, I knew this was an ingredient I’d have to incorporate into my baking. After testing it, I’d recommend spreading this on bread, apple slices, or just eat it out of the jar…it is seriously delicious!

Earth Balance

*Regular peanut butter would suffice, but the taste will be altered*

I added vanilla protein powder to these, but you could use any flavor…chocolate or peanut butter would be interesting!

Peanut Butter Coconut Truffles

1.5 Scoops Protein Powder (45g)

 1/2 Cup Sunflower Seeds, hulled and unsalted (70g)

1/2 Cup Dry Oats (50g)

1/4 Cup Coconut Flakes (25g)

2 TB Agave or Honey

2 TB Coconut Butter

1/2 Cup Coconut Peanut Butter Spread

Method:

Combine first 4 ingredients in a food processor and pulse until fine.

Add remaining ingredients and blend until completely mixed.

Roll into balls, and then more coconut if you’d like.

I made a total of 25 pieces, each one about 15 grams.

Macros for each one: 4.5F/4.5C/3P

Keep in the refrigerator and enjoy at your convenience!
