Yep, you read the title right! Hot chocolate. Pancakes.
There’s really nothing else to say.
I found Starbucks Hot Cocoa with Peppermint mix, and immediately knew I’d come up with another use for it aside from a drink.
If you don’t have the same mix there is no reason to worry. You can substitute regular cocoa powder or a hot chocolate flavor of your choice!
Like most pancakes, these are simple to whip up, and freeze well too if you’d like to save them for a busy morning.
No protein powder? No problem! Use an egg or extra egg whites if you want a larger protein boost!
Hot Chocolate Pancakes
Yield: 1 Serving
2 TB Hot Cocoa Mix or 15 grams (I used 1/2 package)
1/2 Scoop Chocolate Protein Powder (15 grams)
1/4 Cup Oat Flour (30 grams)
1 tsp Baking Powder
3 TB Almond Milk
2 TB Greek Yogurt
2 TB Egg Whites
Combine all ingredients and mix well.
Add milk to desired consistency (less for a thick batter, more for a runny batter).
Pour onto a pre-heated non-stick pan and flip after 2 minutes.
Garnish with anything from candy cane to crushed nuts and syrup!
