Loaded Sweet Potato “Nachos”

This meal is what I like to call a “mash-up.” These are meals where you put together a whole lot of your favorite things, and turn them into an epic taste bud explosion. The following meal is totally customizable to your preferences. ANY type of potato, ANY type of toppings! Use my recipe as a guide and suite it to your liking!

Personally, I went with shredded mozzarella and cheddar cheese, black beans, red and green peppers, green onion, salsa (“Neal’s Brothers” Medium Salsa = heaven), and sweet potatoes!

The only time consuming part is peeling and cooking your potato base, otherwise this meal is easy to put together on a whim and so satisfying!

I chose to cut my potatoes into disc shapes, though you could do fries, wedges, etc. Arrange however you like and dig in!

I mean really, how can you resist that melty goodness!?!?

There is no set amount of ingredients, but for reference, here’s what I used:

150 grams Sweet Potato

3 TB Shredded Cheese Blend

2 TB Black Beans

3 TB Bell Peppers

1/4 Cup Salsa (Cause I’m obsessed!)

Green Onion for Garnish

I baked the sweet potatoes at 450 degrees for roughly 45 minutes.

This will depend entirely on how thick the slices are and the type of potato used.
