Fruit Explosion Muffins

I’m gonna go ahead and file this recipe under breakfasts because if you are someone who doesn’t have/make time for eating in the morning, these will surely do the trick!

Based on my ingredients, and a yield of 12 muffins, each one has only 2.5 grams of fat, 3 grams of protein, and 13 carbohydrates….so go ahead and grab two!

Another bonus is that there is no added sugar, the sweetness comes from the fruit, though you could easily add some honey or use a flavored yogurt.

Fruit Explosion Muffins

1.5 Cups Oat Flour (180 grams)

1/4 Cup Almond Flour (30 grams)

2 TB Coconut Flour (20 grams)

1 tsp Baking Soda

1 tsp Baking Powder

3/4 Banana, Mashed (150 grams)

2 TB Plain Greek Yogurt (30 grams)

1/4 Cup + 2 TB Almond Milk

1 Egg, beaten

1 Cup Frozen Fruit of choice (140 grams)

Method

Preheat oven to 350 and line/grease 12 muffin tins.

In a medium bowl combine the first 5 ingredients. Mix and set aside.

In a smaller bowl mash your banana and add the yogurt, milk, and egg. Mix well.

Add banana mixture to dry ingredients, combine, and stir in fruit.

Evenly fill muffin tins and bake for 25-30 minutes, checking halfway through.

Now throw out your excuses for not eating in the morning!
