Christmas baking is in full effect at my house, how about you? Do you have any baking traditions or just wing it each year?
Some things, like my sugar cookies and meat pie, are absolute musts each year, and then I try to come up with something completely new to keep things fresh.
My consumption of white chocolate is up 300% this season…and I’m okay with that! I’m also okay with a cookie that is easy to make, tastes ahhhhmazing, and is perfect for holiday entertaining. Guests are sure to devour these little gems…

So here’s a recipe to help make the holidays a little simpler 🙂
White Chocolate Pecan Cookies
1/2 Cup Almond Flour (60g)
3/4 Cup Spelt Flour (100g)
1/4 Cup Pecan Pieces (30g)
1/4 Cup White Chocolate Chips (60g)
2 TB Sprinkles (20g)
1 Large Egg
2 TB Agave
2 TB Coconut Butter
2 TB Almond Milk
Preheat oven to 350 and line a cookie sheet with parchment paper.
Combine all dry ingredients in a medium bowl and set aside.
In a glass dish melt the coconut butter, then add the egg, agave, and milk.
Add liquids to dry ingredients, and stir well.
Drop by tablespoon (or desired size) onto cookie sheet and bake for 15 minutes.
I yielded 24 tablespoon sized cookies
Per cookie: 72 Calories, 4g fat/7.5g carbs/1.5g protein
