This may be the easiest pancake recipe on the planet. Though there isn’t a large list of ingredients, these certainly don’t lack in flavor!
Chickpea flour is something I’ve been wanting to use more often because it’s gluten free, high in protein, low in fat, and helps me cater to the diet preferences of my vegan followers.
You can use any flavor protein powder you’d like, any type of milk, and if stevia isn’t in your pantry, sub with your favorite sweetener. Experiment with what you have and have fun!
Chickpea Protein Pancakes
1/4 Cup Chickpea Flour
3 TB Stevia
1/2 Scoop Protein Powder
1/2 tsp Baking Powder
1/3 Cup Almond Milk
Preheat a non stick pan over medium-low.
Combine all ingredients into one bowl and mix well.
Pour batter to your desired size (I do about 3 TB per pancake).
Flip after 2-3 minutes and repeat.
Drizzle, pour, or soak your pancakes in syrup…that’s all up to you!
