I can’t be the only one who finds it hard to cook meals in the summer heat! I love everything about this season (okay, maybe not the bugs and frizzy hair) but the sun, heat, beach, and fresh produce make summer a wonderful time. Over the last 1-2 weeks though, the extreme temperatures we’ve had definitely zapped my eagerness to sit in the kitchen cooking up new meals. Hence this post.
I used to think of salads as being rabbit food, but they are so versatile and quick to put together, and a great way to get in some extra vegetables!
For 1 Person:
1 Cup Baby Spinach
2 Cups Mixed Baby Romaine
1/4 Cup Carrots, Julienned or Chopped
1/4 Cup Zucchini, Julienned or Chopped
1/3 Cup Cooked Quinoa
1/2 Cup Cooked Lean Ground Turkey
2 Tb Shredded White Cheddar Cheese
Assemble as you wish and garnish with dressing or spices.
I opted for Mrs. Dash Garlic and Herb
