Banana Blueberry Coffee Cake

We were without power for roughly 20 hours this weekend due to post tropical storm Arthur. Between trying to save as much of our food as possible (the most expensive items anyways), and waiting for the power to come back, I thought up this treat. This is a total comfort food for me, and luckily my recipe enables me to be comforted by the fact that there is no artificial ingredients, and only 110 calories per serving. So make this, make your coffee (or tea), and make your day!


Banana Blueberry Coffee Cake

1 Cup Oat Flour

1/2 Cup Almond Flour

1/4 Cup Coconut Flour

1/2 Cup Stevia

1 Tsp Baking Powder

1 Tsp Baking Soda

175 Grams Mashed Banana (just over 1/2 Cup)

2 TB Honey

1 Egg, Beaten

3 TB Egg Whites

1/2 Cup Blueberries

Topping:  3 TB Brown Sugar, 1 TB Cinnamon, 1 TB Stevia


In a medium bowl combine all dry ingredients.

In a separate bowl mash your banana and add everything except the blueberries.

Mix well and add the liquids to the dry ingredients. Stir thoroughly.

Add your blueberries and fold into batter until combined.

Pour into a greased 9×9 pan, and sprinkle with cinnamon sugar topping.

Bake at 350 for 20-25 minutes, or until fork inserted comes out clean.

Let cool, remove from pan, and cut into 12 squares.


You put on the coffee, right?
