Sprinkles make any day brighter….especially rainy days!

Cupcakes make days brighter too…so that’s exactly what I made.

But I wanted a cupcake without processed ingredients, that wasn’t dry to eat, and still tasted like cake.

As always, I got what I wanted 😉

Healthy Vanilla Cupcakes

I was surprised by a few things with this recipe:

These little gems have only 95 calories each! (4g Fat, 4g Protein, 12g Carbs).

So go ahead, grab 2 with your coffee!

Healthy Vanilla Cupcakes

1 Cup Oat Flour

1/4 Cup Coconut Flour

1/2 Cup Almond Flour

1/2 Cup Stevia

1 tsp Baking Powder

1 tsp Baking Soda

1 Egg, Beaten

3/4 Almond Milk

1/4 Cup Egg Whites

2 TB Greek Yogurt (I used vanilla, plain would work too)

2 TB Agave or Honey

1-2 TB Sprinkles (optional)

Method

Combine the  first 6 ingredients and stir well.

In another bowl, beat the egg and add remaining ingredients EXCEPT sprinkles.

Mix the wet ingredients into the dry, and when blended well, add your sprinkles.

Pour evenly into 12 baking cups (silicone liners help avoid sticking!)

Bake at 350 for 15-20 min, or until fork comes out clean when inserted.

Let cool and top with “frosting” or topping of choice!

“Frosting”

1/2 Cup Greek Yogurt

2 TB Stevia

Cocoa Powder to taste

*Mix and sample, adding slowly until you get the taste/consistency preferred*
