It’s a long weekend and I’ve been craving chocolate chip cookies lately, so naturally my purpose for today was to make a recipe all my own to satisfy that craving!
I like to make my cookies smaller because it’s a given that I’m going to eat more then 1…..or 3, who’s counting really?!?
Coconut flour is really absorbent and can easily dry out a recipe. However, it balanced well with the other flours used, and didn’t turn the cookies into a crumbly mess (yay!!!)
Now the best part, the recipe!
Chocolate Chip Fit Bites
1/4 Cup Almond Flour
1/4 Cup Coconut Flour
1 Cup Oat Flour
3/4 Cup Stevia
1 Large Egg
1/4 Cup Egg Whites
1 TB Coconut Oil
1 Tsp Vanilla Extract
3 TB Mini Chocolate Chips
Preheat oven to 350 and line a cookie sheet with parchment paper.
Combine all dry ingredients in a medium bowl and mix well.
Melt the coconut oil in a small bowl and then add your egg, egg whites, and vanilla, stirring until combined.
Pour liquids into the first bowl, add chocolate chips, and stir until mixed.
Drop by tablespoon onto the cookie sheet, and flatten with your fingers or the bottom of a spoon.
Bake for 10-13 minutes, or until they are just slightly firmer on the outside.
Let cool and eat up!!
