Easy Energy Squares

I’m back from a lovely vacation full of sun, sand, and relaxation…but now it’s back to reality!  A few days home with no healthy snacks in the fridge meant I may or may not have purchased last minute not-so-healthy options (tsk tsk).

It took a bit to get back into routine, but I finally broke out the food processor and started working an a quick snack I could eat any time of day….mission accomplished! I was very happy with the result as these are simple to prepare and require no bake time.

Not only are they perfect to munch on in between meals, they’re also packed with healthy fats, fibre, and taste!

These squares are all natural and can easily suit vegan diets by using agave instead of honey, and adding a vegan protein powder.

Easy Energy Squares

1/2 Cup Unsweetened Shredded Coconut

1 Scoop Protein Powder (I used Peanut Butter flavor)

1/3 Cup Ground Flax Seed

1 Cup Oat Flakes (I used a wheat free variety)

1/3 Cup Pumpkin Seeds

3/4 Cup All Natural Peanut Butter

1/4 Cup + 2 TB Honey or Agave

Method

Combine first 5 ingredients in a food processor*

 Pulse until mixture is finer and pumpkin seeds are (mostly) broken up.

Add peanut butter and honey, stirring until mixture is sticky.

Press into an 8×8 pan and store in refrigerator until hardened (20-30 minutes)

Energy Squares

Cut into bars (I did 16), wrap individually and store in fridge.

They are sticky when soft, so keeping them cool and separated will make them easier to grab and eat!

 *Note: A food processor is not necessary, you could also just grind up the seeds in a small blender to make them finer.

* Experiment with protein powder flavors, or don’t use any and add more nuts and seeds. These are super versatile!
