Stuffed Sweet Potatoes

I LOVE sweet potatoes! These “tubers” offer great carbohydrate sources, antioxidants, vitamins and minerals, and are perfect for post workout glycogen restoration. With that in mind, you still need to enforce portion control, and watch what you’re serving with those potatoes! If they are covered in a cup of cheese and full fat beef…maybe not the greatest choice. BUT, if they are served with baby greens, mixed vegetables, a touch of butter and some protein…you’ve got a winning meal!

Stuffed Sweet Potatoes

Ingredients (for 4 servings)

4 Medium Sized Sweet Potatoes

1 Cup Chopped Bell Peppers

2-3 Tbsp Chopped Onion

1 LB Lean Ground Meat (I chose turkey)

1/2 Cup Corn (if canned, rinse and drain)

1Tb Olive Oil

Seasoning to taste> I opted for some chipotle and a bit of cayenne


~ Wash the potatoes and pat dry.

~ Pierce each one with a fork a few times and place on a baking sheet lined with tin foil

Baked Sweet Potatoes

~ Bake at 425 for 30-40 minutes, or until they pierce easily with a fork

~ While they bake, heat your oil in a fry pan with the onion.

~ Add ground meat and when half cooked add in pepper and corn.

Stuffed Sweet Potatoes

Cook until meat is ready.

~ You can add seasoning to the meat mixture, or wait and sprinkle it over prepared potatoes.

~ When potatoes are ready, slice down the center, separate, and add your filling 🙂
