Recently I purchased About Time Banana Whey Protein Isolate. Their powders are all natural, sweetened with stevia, and have very few ingredients. Just the smell of this stuff made me want to eat it by the spoonful…but I restrained myself and made these instead!
Banana Coconut Protein Pancakes
~ 1/2 Scoop About Time Whey Protein-Banana
~ 1 Tb Unsweetened Coconut Flakes
~ 1/2 tsp Baking Powder
~ 1 tsp Ground Flax Seed
~ 2 Tb Oat Flour
~ 1 Tb Stevia
~ 2 Tb Mashed Banana
~ 3 Tb Egg Whites
~ Almond Milk to desired consistency (I added about 1 Tb)
~ Combine dry ingredients and then mix in banana and egg whites, adding almond milk a teaspoon at a time.
~ Heat a greased skillet over low-medium heat and pour batter when ready.
~ Cook about 2 minutes/side until done.
~ I topped mine with extra coconut, maple syrup and sprinkles.
*Other great toppings could be: Nut butter, crushed nuts, protein “frosting” (find it here), or greek yogurt.
