I may or may not have survived off pancakes all of last week….oops!
Had some time post-run to whip up something a little funner and this happened:
This recipe is for one serving, so adjust as necessary to make more…trust me, you’ll want more!
Protein Packed French Toast:
~ 2 Slices Bread ( I used Cinnamon Raisin Ezekiel bread)
~ 1/3 C Egg Whites
~ 1 tsp. Cinnamon
~ 2 Tbsp. Vanilla Protein Powder (or flavor of choice)
~ Almond Milk (enough to get desired consistency)
~ Stevia to taste
~ Mix your egg whites and cinnamon together and allow bread to soak.
~ Heat a large skillet over low-medium heat with a touch of butter or coconut oil
~ Place soaked bread on pan and fry til done (2-3 min/side)
~ When done, drizzle prepared “frosting” over top
Other great toppings could be: Peanut Butter, Syrup, or (my fave) SPRINKLES!
